- Blackstone Fajita Seasoning
- Olive Oil
- Onions
- Yellow Bell Peppers
- Red Bell Peppers
- Green Bell Peppers
- Sliced Boneless Chicken Breast (or thighs if you prefer)

How to Cook Chicken Fajitas on a Blackstone Griddle
I think you will find that learning how to cook chicken fajitas on a Blackstone griddle is easier that you expected! I’m going to bet you’ll be adding these to your monthly meal plan. We cook them almost weekly. We all love them and they are just so simple!
Step 1
Cut the chicken into thin strips. After slicing the chicken, place it in a bag or bowl covered with a mixture of the oil and the fajita seasoning. Marinate the chicken for up to 24 hours for maximum flavor. If you are heading out to go camping, you can toss the bowl into the cooler and have it ready when you get there!
Step 2
Next, slice up your peppers and onions into thin slices. Place them in an airtight container or bag and place them into the fridge or cooler for storage until you are ready to cook them.
Step 3
Once you are ready to start cooking, preheat your Blackstone to 400 degrees, adding a small amount of cooking oil to the griddle.
Step 4
Once you have preheated the grill, add the chicken. Your chicken should sizzle nicely when added (that’s how you know the griddle is hot enough). Wait about 5 minutes before turning the chicken with a spatula to allow for some tasty browning. Cover the chicken with a basting cover, checking periodically until the internal temperature of the chicken is 165 degrees.
Step 5
Once the chicken reaches the proper temperature, you can now add the peppers and onions to the griddle! You can also use the basting cover for the veggies to speed up the cooking process. The length of time that they cook is based on your preferences, but I have found that 15 minutes of cooking time on the Blackstone is perfect for fajitas!
*If you prefer, you can cook the peppers and onions separately from the chicken, but we have found that we like the taste of them when cooked together. Of course, it’s important to thoroughly cook the chicken first.

Serve! Now it’s time to serve your Blackstone chicken fajitas! There are no hard and fast rules here. Add whatever you’d like, or eat them as is.
Until I went low carb, I always enjoyed eating mine with corn tortillas with cheese, lettuce, tomatoes and hot sauce. Now I skip the tortillas, but still enjoy the same toppings.
